Soft Snickerdoodle Cookies
Makes 12, 3-inch cookies
Ingredients
- 8 Tbsp Unsalted Butter, at room temperature
- 3/4 C. Sugar
- 1 tsp Vanilla Extract
- 1 Tbsp Cinnamon
- 1 Large Egg, beaten
- Roughly 1+1/3 Cup of Flour
- 3 tsp Baking Powder
- Cinnamon Sugar (3 Tbsp Cinnamon + 3 Tbsp Sugar)
- Cooking Spray
Directions
- Whip butter until creamy. Add sugar, cinnamon, and vanilla. Mix until ingredients are all combined.
- Add in the beaten egg, and mix until combined.
- In a separate bowl, sift the flour and baking powder together. After sifting, add the dry ingredients into the wet ingredients. Fold wet and dry ingredients together with a rubber spatula until just combined.
- Preheat the oven to 400 degrees Fahrenheit. Line a cookie tray with parchment paper and grease with cooking spray.
- Use an ice cream scoop to portion the cookie dough into about 12 cookies. With our hands, shape portions into balls.
- Coat the surface of the ball in cinnamon sugar by rolling the ball in a small bowl with cinnamon sugar. Place the coated dough balls onto the tray, allowing at least an inch of space around each cookie.
- Bake in the oven for 8 minutes or until edges start to brown. Allow cookies to rest at room temperature for at least 10 minutes before serving.
Hot Chocolate Bombs
For 6 bombs
These hot chocolate bombs are all the rage right now due to so many videos of these cool treats trending on tiktok!
Materials
- 2, 6-cavity silicone sphere molds
Ingredients
- 24 ounces semi-sweet chocolate
- 1 Cup mini marshmallows
- 6 Tbsp hot chocolate mix
Directions
- Place the chocolate in a microwave-safe bowl, and microwave in 20 second segments, mixing between segments, until thoroughly melted.
- Using the back of a spoon, spread a thin layer of chocolate onto a clean silicone sphere mold. Allow the chocolate to cool at room temperature or in the fridge until the chocolate hardens (about 5 minutes in the fridge and 20 minutes at room temperature).
- Add 1 Tbsp of hot chocolate powder into 6 chocolate half-spheres, and fill with mini marshmallows.
- Taking your remaining chocolate (you’ll need to melt it again if it has hardened), dip the edge of the other 6 empty half-spheres into the chocolate, and gently attach them to the other 6 filled half-spheres.
- Use your finger or the back of a spoon to wipe away or smooth out the excess chocolate to finish.
How To Use
- Put the chocolate bomb in a mug.
- Pour hot milk over the chocolate bomb. It helps to aim it at one particular spot.
- Once the chocolate melts, stir its contents together until homogenous.
